Farming
Alisan high mountain tea is very well-known all over the world, and it’s neat to see large tea plantations on your way to Alisan Road. Alisan ‘Pearl Dew’ is specific name for the tea produce on the plantation at the 64th kilometer stone and 1300 meters above sea level. The clouds coming from the ocean are readily visible on the roadside. This place is Shi-Zhou which means “stone table”. The locals like to call this place “stone table” due to the large and squarely shaped boulder that looks just like a table on the roadside. Legend has it that this is the place for the deities to savor the amazing tea. The tea here is so good that taste like refreshing pearl dew in the morning.
The temperature difference between day and night in Taiwan’s high mountains is obvious, and the unique mountain climate creates top-notch high mountain tea. Especially in the afternoon, clouds and mist slowly cover the entire tea garden, forming a unique microclimate. In this environment, the growth rate of the tea tree naturally slows down. This is not its weakness, but its advantage. Because of the slow growth, the buds and leaves of the tea tree become softer and the leaves are thicker, which increases the pectin content in the tea leaves. Pectin can make the tea soup fuller and smoother during the tea making process.
Manufacturing
Taiwan’s high mountain tea is actually a general term that refers to tea produced in Taiwan’s tea gardens above 1,000 meters above sea level. High mountain tea usually emphasizes the special aroma and taste of each mountain, so it is mainly lightly fermented, lightly roasted, or even non-roasted fragrant oolong tea.
It is a lightly fermented tea and is classified as a fragrant spherical oolong tea in the Taiwanese tea flavor wheel. After the tea leaves are withered in the sun, indoor withered and stirred, pan-firing, kneaded, and dried, the appearance is tightly kneaded into a spherical shape. The color of the tea leaves is green and fresh, the water color is honey green or honey yellow, the taste is sweet, smooth, soft, rich in activity, and the aroma is Elegant and resistant to brewing, it is a Taiwanese specialty tea that has both aroma and taste. If produced in tea gardens above an altitude of 1,000 meters, due to the cool mountain climate, shrouded in clouds in the morning and evening, and shorter average sunshine, the bitter and astringent components such as catechins in tea tree buds and leaves will be reduced, while theanine and soluble nitrogen, etc. The content of ingredients that contribute to the sweet taste is increased, and the buds and leaves are soft, the mesophyll is thick, and the pectin content is high. It is mainly produced in the Meishan Township, Alishan Township, Fanlu Township and Zhuqi Township in Chiayi County.
Brewing Tips
Warm up the tea vessels with the boiling water. Use 3 grams of tea per 150 milliliters of the water, pour water at a temperature of 95-100 °C and let it steep for approx. 3 minute. In this way, you have the best taste of this tea. In this way, you can gradually prepare 5 to 7 times of tea.
